Ingredients

Scale
  • 3 medium russet potatoes, peeled and cubed

  • 2 large carrots, peeled and chopped

  • 4 hard-boiled eggs, chopped

  • 1/2 cup frozen green peas

  • 1/2 cup canned sweet corn (drained)

  • 1/3 cup red onion, finely chopped

  • 1 cup mayonnaise

  • Salt and pepper to taste

  • 1 tablespoon apple cider vinegar (secondary keyword)

  • 1/2 cup cooked beets, diced (optional) (secondary keyword: remolacha)

Instructions

  • Boil the potatoes and carrots in salted water until tender but still firm. Drain and let cool completely.

  • In a separate pot, boil the eggs. Once cooled, peel and chop them into small pieces.

  • In a large mixing bowl, combine the potatoes, carrots, eggs, green peas, corn, red onion, and (if using) the beets.

  • In a small bowl, mix the mayonnaise with apple cider vinegar. Season with salt and pepper to taste.

  • Add the mayo mixture to the bowl and stir gently until all ingredients are well coated.

  • Chill in the refrigerator for at least 1 hour before serving for best flavor.

  • Serve your ensalada rusa cold, as a side or a main dish.

Notes

  • For a lighter version, mix the mayonnaise with Greek yogurt.

  • Add shredded chicken or tuna to make it a complete meal.

  • If you prefer a touch of sweetness, include diced apple.

  • For a more colorful finish, garnish with parsley or extra egg slices.
